Another holiday is coming up, and that means valuable time to unwind with family and friends and reflect on what we are grateful for. Of course with family gatherings, we all know that means plenty of good food to go along with the celebration.

This year, we are focusing on some vegan friendly holiday options that the entire family will enjoy. Sometimes it can be difficult to accommodate dietary restrictions, but there really are a lot of options available for your vegan friends and family.
These are our top three vegan friendly holiday dishes that you can easily make for your family dinner or potluck. Enjoy!
Honey Dill Glazed Carrots
- 2 medium carrots
- 1 tbsp dill
- 1 tsp of pure unpasteurized honey
Peel and dice the carrots into circles. Bring a pot of water to a boil and cook the carrots until tender. Drain the water and stir in the dill and honey. Serve.
Butternut Squash and Mushrooms
- 1 tbsp olive oil
- 1 butternut squash
- 5 mushrooms, sliced
Cut the squash into cubes and steam. Sauté the mushrooms in a frying pan with olive oil until cooked. Add squash and parsley and simmer for a minute on low to mix the flavours. Spoon out and serve.
Quinoa Cranberry Salad
- 2 cups water
- 1 cup quinoa
- 1 can of chickpeas, drained and rinsed
- 1/3 cup dried cranberries
- 1/3 cup walnuts, chopped
- 3 tbsp fresh parsley, chopped
- 1 tbsp lemon juice
Bring water and quinoa to a boil. Cover and simmer for 10 minutes. Transfer the quinoa into a bowl and fluff with a fork. Add all other ingredients and mix together. Chill and serve.
